We produce Sterling caviar by sustainably farming a Northern California native (endangered) white sturgeon called Acipenser Transmontanus. With 4 farms in the Sacramento area, we are the largest producer of caviar in the Americas. 

The white sturgeon caviar is known to have a richer taste (much like the rare and expensive Beluga from Russia) and tends to be a little oilier than other caviars (which gives it its rich taste).
